Turnover measures how much money changed hands. The BIS survey that tracks the forex market every three years has put global FX turnover at several trillion dollars a day, making it by far the largest financial market.
In a company context, turnover can also mean sales revenue (in British usage) or how often staff or inventory are replaced, so check the context.
